Good evening world and Hello April!
How’s everyone feeling? Bright and yellow after a happy Easter? Loaded to the brim with chocolate? Nice and relaxed after a few days off?
Noosa has finally decided to show itself from its gorgeous, sunny side again and in the last week I managed to squeeze a whole 3 beach days in! Hooray! My tan is slowly returning and my mood has risen dramatically. Funny that, all it takes is some rays of light on my skin and the sound of crashing waves and I’m a new person.
It’s been a great past week. Richards English passport arrived in the mail (yippee, I’ve officially got a British boyfriend!) and we got planning for my citizenship ceremony, which is now only a week away. Can you believe it? In 7 days time we will both be dual citizens, it’s such a dream come true it’s hard to even begin trying to describe how it feels! Happy, happy days!

And why would I be digging out an old photo like this one, you ask? Well, it just so happens the man in the picture had his birthday in the past week. Hip, Hip Hooray Daddy-O! I hope you had a wonderful birthday and ate lots of cake and chocolate.
… oh, and talking about chocolate: let me tell you about or Easter Sunday…
After starting the day with a cosy walk along the beach and a quick little stop at the Hotel, who hosted the Easter Bunny for a Egg Hunt, the idea was to drive to Maroochydore and The Nines for their Easter special (The Nines is the spot serving loaded milkshakes like the ones below)
They were doing a Easter Waffle dish that looked ah-mazing and I was beyond excited to try it. I had managed to convince Richard to drive me the 40 minutes one way to get my sugar-fix, but as we hopped in the car neither one of us felt it was too tempting sitting in a car, driving away from the Sunshine we’d both been waiting for so long. So, we decided to navigate to the grocery store to grab ingredients to make our own version of the Easter Waffle instead. And honestly, law and behold, I think we both need to open our own restaurant and serve desserts full-time… our creation was out of this world!
I present to you; on a base of crumbed white and milk chocolate with honey roasted nuts, garnished with roasted peaches, blackberries, blueberries and raspberries, drizzled in white chocolate sauce, paired with vanilla bean ice cream stuffed egg-halves and topped of with an assortment of Easter eggs: THE waffle of the year!
Yum!!! Just posting this image makes me want to bring yesterday back so I can eat it again and again and again! Now, let’s not mention we both felt dizzy from all that sugar (Richard before me) and had to put the plates away before we could actually finish it completely. But, hello perfection! I don’t think I’ll ever need to order dessert out ever again. And PS! Dad, this one was definitely for you. I know you would’ve loved it just as much as I did and I’m pretty sure you’re the only one I know who would come close to finish the plate. (I actually only had 2 bites of waffle and 1 little egg left on mine, so I almost did it).

After our ginormous chocolate feast we both collapsed for a bit – Richard in the sofa and I in the pool. We then decided to make the most of the rest of the day and returned back to the beach for some tanning and surfing.
What a great way the end the week!
And now, here we are: the second day of April and only one week until I’m Australian. The upcoming week is filled with lots and lots of work for me but I’m keeping my fingers crossed the sun is here to stay so I can get some beach time in between by shifts.
